Bistro Manila has recently opened its doors on Broad Street, bringing authentic Filipino cuisine to the area, which is seldom found even in larger cities. Founded by Ronald and Maria Nutt, Maria hails from the Philippines, which naturally inspired them to establish the restaurant following the closure of Bayou Rouge at the same location last year.

Filipino cuisine has been aptly described by Maria Nutt as “the original fusion cuisine” due to the country’s unique influences from Asian, European, and Middle Eastern culinary traditions. This blend is reflective of the Philippines’ history as an island nation engaged in diverse trade.

Remarkably, Ronald Nutt asserts that Bistro Manila stands as the only Filipino restaurant within a 100-mile radius. He observes a growing interest in Filipino food, noting, “People like it. It’s a taste people are looking for. So we’re bringing authentic Filipino cuisine to Dallas County.”

To begin, the menu will feature a select few dishes, including the beloved noodle dish Pansit Bihon Guisado and Chicken Pork Adobo, a dish with Spanish influences, as well as Lumpiang Shanghai, reminiscent of a spring roll. As the business progresses, Ronald plans to expand the offerings based on customer popular demand, emphasizing that the cuisine is seasoned yet not excessively spicy.

Maria’s passion for cooking is a core element of Bistro Manila, as she aims to serve the types of meals that her family enjoys preparing at home. Ronald highlights their intent to prioritize health-conscious choices, offering meals that, while not health food, are healthier alternatives to traditional fast food but served promptly.

Early patrons have enthusiastically praised the dishes, including former Tally Ho owners Bob and Donna Kelly, who voiced their approval of the cuisine. Maria’s family is involved in the venture, with her daughter and son-in-law, Pinch and Gilbert Golpeo, joining the family effort after relocating from California.

Ronald took to Facebook to express satisfaction with the turnout during the soft opening, indicating that Bistro Manila will operate Monday through Friday, offering takeout from 11 a.m. to 1 p.m. and dine-in options on Friday evenings from 4 p.m. to 7 p.m. He remarks, “We’re going to be different, but we’re going to focus on a taste people will like.”
