Chudas Parnicky has opened Taste of Thailand, a new restaurant in Peterborough City Centre, fulfilling her dream of providing authentic Thai cuisine. Originally starting with a food truck, she expanded her offerings after operating a restaurant in the Woolpack pub and took over the former Pizza Parlour space. Business partner David Nightingale aims to create a vibrant atmosphere to attract more visitors to the city.

Chudas Parnicky, a Thai chef who relocated to the United Kingdom in 2005, expressed immense joy upon the opening of her new restaurant, Taste of Thailand, in Peterborough City Centre. This endeavor fulfills her longtime dream of providing authentic Thai cuisine to the area. Originally starting with a food truck, which she regrettably closed due to the COVID-19 pandemic, Ms. Parnicky subsequently established a restaurant within the Woolpack pub in Stanground. As her business flourished beyond the capacity of that location, she decided to take over the former Pizza Parlour space on Cowgate.

Ms. Parnicky, also known by her English name Emma, is a self-taught chef who draws inspiration from her culinary heritage. Plans for the new restaurant include an open-style kitchen featuring a dynamic team of chefs, which Ms. Parnicky affectionately described as “sexy and crazy chefs.” As hopes for her restaurant grow, her brother, also a chef, is in the process of joining her in the UK to support the business.

Her business associate, David Nightingale, noted that the restaurant’s design reflects a Bangkok-style street ambiance characterized by colorful lighting and lively decor. He expressed confidence that Taste of Thailand will introduce something distinct to the local dining scene, asserting, “Let’s try and push the city positively, and supporting independents like us will help.” Moreover, Mr. Nightingale anticipates that the city council will consider promoting a pedestrian-friendly city center, thus creating a more vibrant and appealing urban experience reminiscent of some European cities.
